Yum yum! Thats all I have to say about these.

I made this almost exact recipe using some left over Chuck roast I had, simmers the chuck roast in 1/2 cup water for 30 minutes, seared it both sides, mixed in 1/2 cup beef broth, 3 tablespoons Red Wine vinegar, 2 tbsp chili powder, 1 tbsp ground cumin, simmered for 2 hours.

Shredded beef

Much smaller recipe, made 5 HUGE enchiladas using Red Sauce, Green Chili pepers, 1 1/2 lbs of cheese.

My roomate also agree's! Said best enchiladas had North of the Border!
